HOLIDAY MORNING FRENCH TOAST

3 Granny Smith apples (peeled, cored, sliced thin)
½ cup dried cranberries
1 cup brown sugar
½ cup melted margarine or butter
3 teaspoons cinnamon (divided)
1 loaf Italian bread (cut into 1 inch thick slices, usually gives 12 slices removing the ends)
6 large eggs
1 ½ cups milk
1 tablespoon vanilla

Combine brown sugar, butter and 1 teaspoon of cinnamon in small bowl.

In large bowl combine apples and cranberries.  Add brown sugar mixture and toss until apple slices are coated well.  Spread in bottom of greased 9 x 13 pan.  Arrange bread slices on top.

Mix together the eggs, milk, vanilla and remaining 2 teaspoons of cinnamon and pour over the bread being sure to soak each piece. Cover with foil and refrigerate from 4 to 24 hours. Bake, covered with foil, in 375 degree oven. Remove foil and bake 5 additional minutes. Let stand 5 minutes, then enjoy!
